Low Carb Chocolate Chip Cookies (Keto)It would be difficult to over-emphasize how delicious these keto chocolate chip cookies are. You go keto and you think things like the cookie are out and then you taste this one and realize that you are in the game. Here we are: in the chocolate chip cookie game.

Fair warning: This particular cookie poses a problem that the regular chocolate chip cookie poses: You will want to eat the whole batch and you really shouldn’t. This is low in carbs but only if you eat one or two. When you eat 10, you’re in some dangerous territory. (Territory that has inspired a serious amount of exercise among someone who will remain nameless…)

This bakes up as simply as a regular chocolate chip cookie and so if you are a baker, this is just a variant on the cooking you already know. The only issue with these low carb flour recipes is that they do tend to brown on the bottom more quickly than regular gluten flour. Keep a closer eye on them in the oven. You will also have most luck baking these on a non-stick surface like parchment paper. Beyond that, you’re ready to get started.

Keto Chocolate Chip Cookies Ingredients

  • 1 cup butter, softened
  • 1 cup erythritol
  • 1/2 t liquid stevia
  • 1/2 T molasses
  • 2 eggs
  • 1 cup almond flour
  • 3/4 cup coconut flour
  • 1/4 cup flaxseed meal
  • 2 T peanut powder
  • 1 t baking powder
  • 1 t salt
  • 1 cup keto chocolate chips (sweetened with stevia or other keto sweetener)

Steps

Low Carb Chocolate Chip Cookies (Keto)

  1. Preheat your oven to 375 degrees.
  2. Combine butter, sweeteners, and egg in a mixer. Mix well.
  3. In a separate bowl, combine flours, peanut powder, baking powder, and salt. Stir.
  4. Add flour mixture to butter mixture. Mix together well in the mixer.
  5. Stir in chocolate chips.
  6. Place in small rounded spoonfuls on a parchment-lined baking pan, leaving a couple of inches between cookies. Flatten them just a bit.
  7. Bake in the preheated oven for 8-10 minutes, watching them carefully. They will brown quickly in the end.
  8. Allow them to cool for a few minutes before moving them to a cooling rack.
