Keto Chocolate Mousse

It would be difficult to beat this basic keto chocolate mousse dessert when you are ready to splurge and don’t want to mess around. It is as simple to make as it is delicious. You can eat it immediately or prepare it for later.

I do see this food as a splurge if you are trying to lose weight aggressively. In the 8 months that I lost 100 pounds, I did have a fairly strict rule of no desserts. That rule helped me lose aggressively and have less concern about over-eating calories. As I moved closer to my goal and began my maintenance phase, desserts like this popped onto the menu, though I continue to be mindful of how much I eat. Let’s be real: I can eat this entire recipe with no problem whatsoever. I doubt I have a cream deficiency and so I would see this as a bit excessive. That’s just my own philosophy as I present to you this really fantastic keto chocolate mousse.

Keto Chocolate Mousse Ingredients

  • 1 cup cream
  • 1/3 cup erythritol (or other keto sweetener)
  • 1/3 cup ricotta or cream cheese
  • 3 T cacao powder
  • 1 t vanilla

  1. Whip cream to soft peaks in a stand mixer of electric hand mixer.
  2. Add sweetener.
  3. Set some whipped cream aside for topping on the mousse.
  4. In a separate bowl, use a mixer to whip the ricotta/cream cheese.
  5. Add cacao and vanilla to the whipped ricotta or cream cheese.
  6. Add the whipped cream to the cheese blend.
  7. Adjust for sweetness. Adjust the whipped cream for sweetness.
  8. Serve in small dishes topped with whipped cream.

As for the 100 pounds in 8 months, I’m actually down over 140 pounds in all, half of my previous 280-pound self. I combined the keto diet with intermittent fasting for some massive success. Do not miss the before and after photos!
