Keto chocolate infused with lavender! This of this recipe as more of the beginning of some fun kitchen experimentation. You are infusing coconut oil with the flavor of lavender or the herb of your choice. You then combine it with chocolate and a sweetener to create a confection. The fun part is that you can play with this for years, trying all of the herbs on the planet.
For strong-flavored herbs such as rosemary, I would cut the amount of herb in half to start. If the mixture is too strong in herb flavor, you can add more coconut oil and cacao to dilute the flavor. Taste it before you freeze it to determine if you would like to dilute it. To my taste, lavender is a fairly mild herb and is, therefore, a good place to start with your experimentation.
I use stevia for this recipe but it is highly adaptable to your favorite sweetener. My only caution with the sweetener for this particular recipe is that those sweeteners that have an alcohol base will not work well. For instance, liquid stevia is often sold as an alcohol extract. Alcohol will sink to the bottom of the candy molds and your stevia will then pool up in tiny mounds on the bottom of the candy. Use a powder of some sort that will stay suspended in the chocolate.
