Teff Peanut Butter Cookies (Gluten-Free, Corn-Free)

Teff Cookies at FreshBitesDaily.comThis simply recipe combines the nutritional powerhouse teff with nut butter and maple syrup to create a simple cookie. Teff is loaded with minerals and protein and is becoming a popular gluten-free flour option (read more here about teff).

These cookies are easy to make and store well in an air-tight container. They are certainly dessert, but a dessert you can feel good about serving to your children.

Teff Peanut Butter Cookies Ingredients

  • 1/2 cup maple syrup
  • 1/2 cup coconut oil
  • 1 tsp vanilla
  • 1 cup peanut butter
  • 1 1/2 cups of teff flour, brown or white
  • 1/2 tsp sea salt

  1. Mix together flour and salt. Set aside.
  2. Melt the coconut oil.
  3. Combine the coconut oil with the remaining ingredients in a mixer. When well blended, add the dry ingredients.
  4. Drop by rounded spoonfuls on a greased baking sheet. Flatten with a fork.
  5. Bake in 350 degree oven for 15 minutes.

I love recipes with only a handful of ingredients. Teff flour is such a hearty, nutritious flour. These cookies look great!

These look delicious, I absolutely love peanut butter cookies. Do you think they would work with raw honey instead of maple syrup?

I just bought a bag of teff (whole grain) at my local health food store. So I was glad to come across your recipe on works for me wednesday. I think I will make it for my kid’s after-school snack. I look forward to reading more of your blog.

Are these cookies crunchy? I have been looking for a gluten free option that has a crunch to it. Most seem to be more chewy.

Made these today and they are tasty but terribly dry. Add an egg if you make these and you will enjoy them.
