Freezing Eggplant, Roasted
All of our methods for freezing eggplant are simple but just have you cook the eggplant first. Here you cook it in small cubes and freeze the cubes.
- 6 units eggplant
- 2 cloves garlic crushed
- 1 tsp salt
- 1/4 cup high heat oil avocado, peanut, extra light olive oil, high oleic safflower oil
Wash eggplant. Cut into cubes.
Peel and crush garlic
Toss all ingredient on a cookie sheet and spread them evenly across the sheet.
Place in a 375 degree oven for about 45 minutes.
Roasting time will vary based on humidity. Check for doneness. Roast until the cubes are brown and the insides creamy.
Allow eggplant to cool. Spread out on cookie sheet and place in freezer.
When eggplant is frozen, transfer it to freezer storage containers or baggies for longer-term storage in your freezer.
